A Healthier Pouding Chomeur(not really)

Are you someone who loves to have a touch of sweetness after a good meal, then if this describes you perfectly, then I have a good dessert recipe for you.

for the batter of this fruit cake you will need :

1 cup of room temparature unsalted butter

2 cups of sugar

2 eggs

2 cups of flour

3 teaspoons of baking powder

1 teaspoon of baking soda

1/2 teaspoon of salt

1 cup of milk

1 teaspoon of vanilla essence.

Preheat your oven at 350f

Start by mixing all of your dry ingredients (flour,baking powder,baking soda,salt) in a mixing bowl.

Cream your butter and sugar and vanilla until your butter is light and fluffy.

Add your eggs one at a time (room temparatured eggs are recommended)

Add your milk and mix until homogenous

Combine your dry and wet ingredients in one mixing bowl until your mixture is smooth.

for the garniture you will need :

1 and 1/2 cups of any berry fruits you like (blueberries are my personal favorite)

1-2 cup of sugar (You may use a little bit less than this if you prefer your desserts to be reduced in sugar)

 

Start by washing your fruits (no bugs are needed in this recipe)

Using a paper towel gently dry your fruits.

Add your sugar and mix until every  fruit is covered in that crystal goodness.

 

Pour your fruit into a pyrex cooking bowl.

BEWARE !! :

Make sure to use a bowl that is bigger that you would normally use so it will not overflow

BACK TO THE RECIPE

Spread evenly

Then put your vanilla batter on top and bake at 350f for 45 to 50 minutes.

BAKING TIPS : to check if your batter is cooked put a thootpick in the middle of your cake. If the thootpick comes out clean, it means that your cake is cooked in the center. If little bits of batter are still on the thootpick, you may need to bake your pounding a little while longer.
