To save a lot of time, meal prepping your lunches is the way to go. It might not look appealing to cook for a few hours during the weekend, but once the week starts, you’ll be glad that you did. This way, you also get to have more time for yourself during the week to concentrate on your studies or personal stuff.
The first idea is a chicken pasta salad. While being good to eat cold, it’s also customizable. For example, you can add as many fruits and vegetables to it and the ones you like. For example, cucumber, corn, carrots, strawberries, and tomatoes are great things to add to it. An advantage of it is that since it’s homemade, you can make lighter dressings with it, or simply not put any.
The second option is a tuna veggie wrap. While having a high amount of protein with the tuna, you also have veggies in it, which makes it a healthy option. Even though it’s not the best thing to meal prep, it’s not time-consuming. If your veggies are already prepared, you can just put everything in the wrap, fold it, and it’s already done.
The last idea is a salad with edamame and chickpeas. While being suitable for vegetarians, it also has great characteristics to bring to the meal. Edamame is a food rich in protein and minerals, and chickpeas are high in fiber. Also, canned chickpeas are not expensive since they are about 1,59$ for 540 ml. To enhance the flavor, you can make an easy peanut dressing by combining peanut butter, water, soy sauce, and rice vinegar. You can measure everything by eye and adjust it the way you like.
Eating healthy might seem boring sometimes, but with these ideas, it’s completely the opposite. Not only is it easy to make, but it’s also better for your well-being. Eating nutritious meals keeps you full and energized all afternoon, which makes it less hard to concentrate at the end of the day.
